Ingredients

Directions

The book says “a very hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cut the lard and butter into small pieces using a knife or rub them together with your fingertips.

  2. Add enough milk or water to form a dough similar to pie crust, mixing with a knife.

  3. Roll out the dough very thin and cut it with the top of a claret glass or a small cutter.

  4. Prick the biscuits and bake in a very hot oven at 400°F (200°C) for 10 minutes.
