Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatin
Sets the liquid into a firm, wobbly structure as it cools.
Egg whites
Whipped into foam, they lighten the texture and make the sponge airy.
White sugar
Sweetens the dish and helps stabilise the whipped foam.
Lemon juice
Adds acidity and bright flavour that balances the sweetness.

The step that matters

Beat until white and thick after the mixture cools. Egg whites only whip into a stable foam when the mixture is cold and just starting to thicken. If added while warm, the foam collapses and the sponge loses its airy lightness.

Swap the lemon

How well each one fits the dish's main ingredients (gelatin, sugar, egg):

  3. Figfits about as well
  4. Lemonthe original

Fit is the average pairing score against gelatin, sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
