Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Beat the butter and sugar together until creamy.

  3. Add the beaten egg yolks and mix well.

  4. In a separate bowl, beat the egg whites until stiff peaks form.

  5. Gently fold the egg whites into the butter mixture.

  6. Gradually add the flour and lemon zest, mixing until just combined.

  7. If desired, fold in the sliced almonds.

Bake

  1. Pour the batter into a greased loaf pan and bake for about 1 hour or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich the batter, and whipped whites add lift and a light, airy structure.
Butter
Creamed with sugar, it traps air and gives the cake its tender, rich texture and flavor.
Sugar
Sweetens the cake and helps hold air when creamed with butter, supporting a tender crumb.
Flour
Provides the structure that sets the cake as it bakes.

The step that matters

Folding in the egg whites. Whipped whites hold the cake's lift. Stirring them in vigorously knocks out air and makes the cake dense, so fold gently until just blended.
