Ingredients

Directions

Stew the veal

  1. Place the veal strips in a skillet and cover with cold water.

  2. Add the sliced potato and stew gently for 20 to 30 minutes, ensuring the water does not boil away.

Finish and serve

  1. Once the meat is tender, add the fresh milk and flour mixed with a little milk.

  2. Season with butter, salt, pepper, and parsley if desired.

  3. Slice the hard-boiled eggs and add them to the broth.

  4. Bring everything to a boil and serve with or without toast.

What each ingredient does

Veal
Provides the main protein, which becomes tender and flavourful as it stews gently.
Potato
Adds body and starch that thickens the broth slightly as it cooks.
Milk
Adds creaminess and softens the broth into a mild, rich liquid.
Flour
Thickens the milk and broth so the stew becomes smoother and less watery.
Eggs
Add substance and a soft, mild richness when sliced into the broth.

The step that matters

Add the milk and flour mixture after the meat is tender. Flour mixed with milk must be stirred in smoothly; added to a boiling or lumpy liquid it can clump. Adding it once the veal is tender keeps the sauce smooth and lets it thicken evenly.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (veal, potato, egg, milk, flour, butter, pepper):

  1. Parsleythe original
  2. Nutmegfits about as well
  3. Cinnamonfits less well
  4. Turmericfits less well

Fit is the average pairing score against veal, potato, egg, milk, flour, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
