Fruit Pie

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. Make a pie crust using flour and butter.

Layer the pie

  1. Place a layer of crust in the bottom of a 2-quart tin basin.

  2. Add a 2-inch thick layer of chopped sour apples.

  3. Layer chopped raisins on top of the apples.

  4. Sprinkle sugar, pieces of butter, and spices over the raisins.

  5. Repeat layering with crust and fruit until the dish is full.

  6. Cover with a final layer of crust on top.

Bake and serve

  1. Bake for 2 hours.

  2. Invert onto a plate and sprinkle with fine sugar before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Forms the crust structure that holds the layers together.
Unsalted butter
Adds fat for a tender, flaky crust and richness to the filling.
Raisins
Add concentrated sweetness and chewy texture to the filling.
Sour apples
Provide moisture and tart acidity that balances the sugar.
Sugar
Sweetens the filling and helps draw out and thicken fruit juices.

The step that matters

Layering the crust and fruit. Apples release a lot of liquid as they bake. Layers that are too thick or uneven can leave the centre wet and underbaked while the edges over-brown, so keep each layer even.

Swap the apple

How well each one fits the dish's main ingredients (flour, butter, raisin, sugar, clove, nutmeg):

  1. Vanillafits better
  2. Figfits better
  3. Lemonfits about as well
  4. Applethe original

Fit is the average pairing score against flour, butter, raisin, sugar, clove, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
