Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Peel and core the apples, then cut them into small pieces.

  2. Place the apples in a saucepan with a little water, cinnamon, cloves, and lemon rind.

  3. Stew over low heat until the apples are soft.

  4. Sweeten to taste.

  5. Pass the mixture through a fine sieve.

Assemble and bake

  1. Add the egg yolks, egg white, butter, grated nutmeg, lemon peel, and lemon juice, then mix well.

  2. Line a pie dish with the pie crust.

  3. Fill it with the apple mixture.

  4. Bake at 350°F (175°C) for 30 minutes.

What each ingredient does

Apples
Provide the bulk and flavour of the filling, softening into a purée when stewed.
Egg yolks
Enrich the filling and help it set into a custard-like texture when baked.
Egg white
Adds protein that helps the filling set and hold its structure as it bakes.
Butter
Adds richness and a smooth, tender mouthfeel to the filling.
Sugar
Sweetens the filling and balances the tartness of the apples and lemon.
