Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sparkling gelatine
Forms the gel structure that makes the jelly set firm when chilled.
Sugar
Adds sweetness and helps balance the sharpness of the lemon and fruit juice.
Lemon rind and juice
Adds acidity and bright citrus aroma that balance the sweetness.
Orange or raspberry juice
Adds fruit flavor and liquid that becomes part of the set gel.

The step that matters

Dissolve the gelatine fully before adding other ingredients. Gelatine only sets properly when its granules are fully hydrated and dissolved in liquid. Undissolved granules leave gritty or weak patches in the finished jelly.
