Ingredients

Directions

Prepare the fruit

  1. Separate the skin from the pulp of the grapes, keeping them in separate dishes.

  2. Place the pulp in a preserving kettle with ½ cup of water.

  3. Heat thoroughly, then run through a colander to separate the seeds.

  4. Add the skins to the pulp and weigh the mixture.

Cook the jam

  1. For each pound of fruit, add ¾ pound of sugar.

  2. Add just enough water to prevent burning.

  3. Cook slowly for 45 minutes.

What each ingredient does

Grapes
Provide the fruit, pectin and flavor that form the jam's body and taste.
Sugar
Sweetens the jam and helps it thicken and keep as a preserve.

The step that matters

Cook slowly for 45 minutes. Slow cooking with just enough water keeps the sugar and fruit from scorching on the bottom of the kettle while the mixture thickens. Too much heat burns the sugar and gives a bitter taste.
