Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the batter

  1. Preheat the oven to 400°F (200°C).

  2. Cream the butter and sugar together until light and fluffy.

  3. Beat the egg yolks into the mixture, then add the flour and baking powder.

  4. If using cream of tartar, mix it with the flour and add the baking soda to the milk.

  5. Combine all ingredients, adding lemon extract to taste, and beat well for a few minutes.

Bake and assemble

  1. Divide the batter among four flat baking tins and bake until golden.

  2. Once cooled, layer with jelly or custard and sprinkle with moistened coconut.

  3. Ice the top as desired.

Flour
Provides the structure that holds the cake layers together.
Butter
Adds fat for a tender texture and rich flavour.
Sugar
Sweetens the cake and helps it brown as it bakes.
Baking powder
Releases gas during baking so the layers rise.
