Pound Cake

Why it works: Fig and almond match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 519 recipes. Both carry alpha-pinene, which smells pine, turpentine. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Beat the butter and sugar together until creamy.

  3. Add the beaten egg yolks and mix well.

  4. In a separate bowl, beat the egg whites to stiff peaks.

  5. Gently fold the egg whites into the mixture.

  6. Add the flour and mix until just combined.

  7. Fold in the figs and almonds.

Bake

  1. Pour the batter into a greased loaf pan and bake for about 1 hour or until a toothpick comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich and bind the batter, while whipped whites add lift and a light crumb.
Butter
Fat that creams with sugar and gives the cake its tender texture and rich flavour.
Sugar
Sweetens the cake and, creamed with butter, traps air that helps it rise.
Flour
Provides the structure that sets as the cake bakes.
Figs
Add moisture and natural sweetness to the crumb.
Almonds
Add nutty flavour and a bit of crunch.

The step that matters

Folding in the egg whites. Whites beaten to stiff peaks hold the air that makes the cake light. Folding gently keeps that air in; vigorous stirring deflates the batter and produces a dense loaf.

Swap the lemon

How well each one fits the dish's main ingredients (egg, sugar, butter, flour, fig, almond):

  1. Vanillafits better

  3. Apricotfits better
  4. Lemonthe original

Fit is the average pairing score against egg, sugar, butter, flour, fig, almond. Candidates are from the same food group and used in at least 100 recipes.
