What each ingredient does

Rich puff pastry
Forms the flaky, crisp shell that holds the filling.
Large fresh oysters
Provide the main savory filling and their briny flavor.
Hard-boiled egg
Adds body and richness to the filling as it is grated in.
Oyster liquor
Adds moisture and concentrated oyster flavor to the stewed filling.
Butter
Adds fat and richness to the filling.

The step that matters

Let the stewed oysters cool completely before filling the shells. Adding warm filling to puff pastry melts the butter in the dough before it can set, so the shells turn greasy and lose their flakiness. Cooling first keeps the pastry crisp.

Swap the mace

How well each one fits the dish's main ingredients (oyster, clove, nutmeg, egg, butter):

  1. Cinnamonfits better
  2. Allspicefits better
  3. Parsleyfits better
  4. Macethe original

Fit is the average pairing score against oyster, clove, nutmeg, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
