Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sour apples
Provide tartness and moisture that keeps the layers from drying out as they bake.
Dried bread crumbs
Absorb the milk and set into a soft, pudding-like structure.
Beef suet
Adds fat that enriches the pudding and contributes to a richer texture.
Sweet milk
Moistens the crumbs and helps bind the layers as the pudding bakes.

The step that matters

Pour in the sweet milk over the layers. The crumbs need enough liquid to soften fully; too little leaves dry pockets, while the layers must still be evenly moistened before baking so the pudding sets rather than stays crumbly.
