Lemon Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream the butter and sugar together.

  3. Add the sweet milk and egg yolks, mixing well.

  4. Stir in the flour and the juice of the lemon.

Bake and finish

  1. Pour the mixture into a pie crust.

  2. Bake for 30‑35 minutes until set.

  3. Whip the egg whites and spread over the pie as frosting.

  4. Return to the oven for a few minutes until the frosting is lightly browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Add richness and help the filling thicken and set when baked.
Butter
Adds fat and richness, giving the filling a tender texture.
Sugar
Sweetens the filling and balances the tartness of the lemon.
Flour
Thickens the filling so it holds its shape when cut.
Lemon
Provides the acidity and bright flavour that defines the pie.
Egg whites
Whipped into a frosting that sets and browns on top of the pie.

The step that matters

Return to the oven for a few minutes until the frosting is lightly browned.. Meringue-style frosting can easily over-brown or weep if baked too long. Watch it closely so it browns lightly while the filling stays set underneath.
