What each ingredient does

Cucumbers
Provide the bulk of the relish and its crisp, fresh texture once drained.
Onions
Add sharp, savory flavor that balances the sweetness of the vegetables.
Green peppers
Contribute crunch and a grassy, vegetal flavor to the relish.
Vinegar
Acts as the preserving agent and provides the tangy acidity that defines the relish.

The step that matters

Drain the grated cucumbers overnight. Cucumbers are mostly water. Draining them removes liquid that would otherwise dilute the vinegar and make the relish watery and less crisp.

Swap the onion

How well each one fits the dish's main ingredients (cucumber, pepper, vinegar):

  1. Capsicumfits better
  2. Radishfits better
  3. Mustardfits better
  4. Onionthe original

Fit is the average pairing score against cucumber, pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
