Potato Puff

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 400°F (200°C).

Make the mixture

  1. In a bowl, combine the mashed potatoes, milk, butter, salt, and pepper.

  2. Separate the eggs; beat the whites and yolks separately.

  3. Gently fold the beaten yolks into the potato mixture, then fold in the beaten whites.

Bake

  1. Transfer the mixture to a pie dish.

  2. Bake in the oven until browned, about 20-25 minutes.

  3. Spread a little butter on top after placing it in the oven for a richer crust.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites lift the mixture and yolks add richness and set structure as it bakes.
Mashed potatoes
Provide the bulk and body of the puff, giving it a soft, tender interior.
Milk
Adds moisture and softness to the potato base.
Butter
Adds fat for flavour and helps the top brown and crisp.

The step that matters

Fold in the beaten whites gently. Deflating the whites by stirring or mixing too hard releases the trapped air that makes the puff rise, so the result turns dense instead of light.

Swap the potato

How well each one fits the dish's main ingredients (milk, butter, pepper, egg):

  1. Capsicumfits about as well
  2. Potatothe original
  3. Asparagusfits about as well
  4. Chivefits less well

Fit is the average pairing score against milk, butter, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
