The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, combine sweet milk and flour.

  3. Add the egg yolks and brandy, mixing well.

Fold and bake

  1. In a separate bowl, beat the egg whites until stiff peaks form.

  2. Gently fold the egg whites into the batter.

  3. Pour the mixture into a baking dish and bake for 30 minutes.

  4. Serve with brandy sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Yolks enrich and bind the batter, while whipped whites lighten it and help it rise.
Flour
Starch sets as it bakes, giving the pudding its body and structure.
Sweet milk
Forms the liquid base and provides moisture that steams during baking.
Brandy
Adds aroma and flavour to the batter and the accompanying sauce.

The step that matters

Folding in the egg whites. Whipped whites hold air that lightens the batter. Stirring vigorously knocks that air out, so fold gently and stop once no white streaks remain.
