Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Form the main body of the dish and supply a briny, savory flavor.
Vinegar
Adds acidity that sharpens the flavor and helps preserve the oysters.
Whole cloves
Contribute a warm, aromatic spice note to the pickling liquid.

The step that matters

Let the oysters and vinegar cool before combining. Hot oysters cook further when they meet the hot vinegar, which can make them rubbery and shrink them. Cooling both keeps the oysters tender while the acid works on them.

Swap the clove

How well each one fits the dish's main ingredients (oyster, vinegar, pepper):

  1. Tarragonfits better
  2. Dillfits better
  3. Parsleyfits better
  4. Clovethe original

Fit is the average pairing score against oyster, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
