Directions

Prepare the roe

  1. Wash the shad roe in cold water and dry it.

  2. Heat lard, butter, or drippings in a frying pan over medium heat.

  3. Season the roe with salt and pepper, then place it in the pan.

  4. Cover the pan to prevent spattering and fry for about 20 minutes, turning several times for even browning.

Make the mashed potatoes

  1. While the roe cooks, peel and slice the potatoes.

  2. Boil the potatoes in salted water until tender.

  3. Drain the potatoes and mash them with a potato masher.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Shad roe
Provides the rich, delicate main protein that browns in the fat while staying moist inside.
Lard, butter, or drippings
Conducts heat evenly and adds fat for browning the roe and flavor.
Potatoes
Cook soft and starchy, forming the smooth, moist base of the mash.
Butter
Adds fat and richness, softening the mashed potatoes and boosting flavor.

The step that matters

Frying the roe over medium heat with turning. Shad roe is delicate and can split or dry out if overcooked. Medium heat and turning several times promote even browning while the covered pan limits spattering and keeps the interior moist.

Swap the potato

How well each one fits the dish's main ingredients (roe, butter, pepper):

  1. Potatothe original
  2. Capsicumfits about as well
  3. Chivefits less well
  4. Onionfits less well

Fit is the average pairing score against roe, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
