Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavor and tender, briny filling for the dish.
White onions
Add sweetness and savory depth as they brown in the hot fat.
Butter
Adds richness and browns in the pan, giving the sauce a nutty aroma.
Cayenne pepper
Adds gentle heat that lifts the flavor of the butter.

The step that matters

Add the oysters to the frying pan with the browned butter.. Oysters cook very quickly and turn tough and rubbery if overcooked. Add them at the end and cook only until their edges curl, so they stay tender.
