What each ingredient does

Tripe
Forms the main body of the dish and becomes crisp-edged and tender when fried.
Flour
Coats the tripe pieces so they brown evenly and develop a crisp surface in the hot fat.
Lard or drippings
Conducts heat for frying and gives the tripe a rich flavor and golden browning.
Onion
Adds savory sweetness and aroma to the frying fat as it cooks.

The step that matters

Browning the tripe in smoking fat. The fat must be hot enough to brown the flour coating quickly; if it is too cool, the tripe absorbs grease and turns soggy instead of crisp.

Swap the onion

How well each one fits the dish's main ingredients (flour, pepper):

  1. Arrowrootfits better
  2. Okrafits better
