Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Oysters
Provide the main flavor and tender texture of the sauce, with their liquor adding savory depth.
Flour
Thickens the drawn butter so it gives the sauce body.
Butter
Forms the drawn butter with flour, adding richness and smooth mouthfeel.

The step that matters

Stew the oysters until puffed. Oysters overcook quickly and become tough and shrunken if heated too long. Stopping once they puff keeps them tender.
