What each ingredient does

Cauliflower
Is the main vegetable; cooking until tender softens its texture and makes it easy to eat.
Drawn butter
Adds richness and fat, coating the cooked florets with flavour.

The step that matters

Serve immediately to prevent darkening. Cooked cauliflower releases compounds that discolour and turn grey or brown as it cools and stands. Serving it straight away keeps it looking fresh and pale.
