Ingredients

Directions

Make the custard

  1. Pound the coffee in a mortar until crushed but not powdered.

  2. Combine the crushed coffee with the milk and sugar in a saucepan; bring to a boil.

  3. Remove from heat and let it cool.

  4. Strain the mixture over the egg yolks in a double boiler.

  5. Stir over low heat until the custard thickens, being careful not to curdle.

Freeze

  1. Once cool, fold in the whipped cream.

  2. Freeze the mixture in an ice cream maker.

  3. Transfer to a mold and freeze until ready to serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the custard as they set and give the ice cream a rich, smooth body.
Heavy cream
Adds fat and a light, airy texture when whipped and folded in.
Milk
Forms the liquid base that carries the coffee flavor and sugar.
Loaf sugar
Sweetens the base and lowers its freezing point for a softer scoop.
Freshly roasted coffee
Provides the main coffee aroma and flavor once steeped in the milk.

The step that matters

Stir the custard over low heat. Egg yolks thicken as they warm but curdle if overheated, leaving a grainy texture. Gentle, steady heat in a double boiler keeps the custard smooth.
