Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the jelly

  1. Dissolve the sugar and corn starch in the lemon flavor.

  2. Cook the mixture as you would for boiled custards.

  3. Once cooked, pour into an earthen dish and let cool.

Top and bake

  1. Beat the egg white with 2 tablespoons of sugar until stiff.

  2. Spread the egg white mixture over the top of the jelly.

  3. Place in a 350°F (175°C) oven and brown slightly.

Serve

  1. Serve with cream and sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn starch
Thickens the water and sugar mixture into a set, spoonable jelly as it cooks.
Egg white
Whips into a stiff foam that forms a light topping and browns in the oven.
Sugar
Sweetens the jelly and, whipped with the egg white, stabilizes the meringue topping.

The step that matters

Cooking the corn starch mixture. Corn starch only thickens fully when the mixture reaches a boil and is stirred, so undercooking leaves the jelly thin and runny instead of set.
