Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Preheat the oven to 400°F (200°C).
For the white cake, cream together 1 cup of butter and 3 cups of white sugar.
Add 5 cups of flour, ½ cup of sweet milk, ½ teaspoon of baking soda, and the whites of 8 eggs. Flavor with lemon.
For the dark cake, cream together 1 cup of butter and 2 cups of brown sugar.
Mix in 1 cup of molasses, 1 cup of sour milk, 1 teaspoon of baking soda, 4 cups of flour, the yolks of 8 eggs, and 1 whole egg. Add spices to taste.
In a baking pan, layer the dark cake batter first, then the white cake batter, repeating until finished with a dark layer.
Bake in the preheated oven.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
