What each ingredient does

Oysters
Provide the main flavour and tender texture once cooked.
Milk
Adds richness and a mild sweetness to the broth.
Butter
Adds fat for richness and a smooth mouthfeel.

The step that matters

Boil until the oysters are cooked. Oysters turn firm and rubbery if overcooked, so they should be heated gently in the water bath until just cooked through.
