Salt Mackerel

Ingredients

Directions

  1. Wash the salt mackerel and soak it in plenty of cold water for 24 hours.

  2. Place the mackerel skin side up in the water to allow the salt to escape.

  3. Scrape out the black skin from inside the mackerel and cut off the heads.

  4. For boiling, cut the mackerel into three pieces crosswise; for broiling, split them lengthwise.

  5. Hang the mackerel to dry for 24 hours before cooking.

  6. When serving, pour a spoonful of clear melted butter over the fish.
