Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Vegetable marrow
Forms the body of the soup and, once passed through a sieve, gives it a smooth texture.
Butter
Adds fat and richness, carrying flavour as the onion and marrow soften.
Flour
Thickens the soup as it cooks, giving it body.
Milk
Adds creaminess and mild sweetness, softening the soup's flavour.
Onion
Adds savoury depth as it softens in the butter.

The step that matters

Stirring the flour into the soup. Flour added directly to hot liquid can clump. Mixing it smooth with a little cold milk first lets the starch disperse evenly, so the soup thickens without lumps.

Swap the onion
