Why it works: Apple and lemon are a kitchen classic. They rank in the top 14% of all ingredient pairs, and cooks put them together in 7,551 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓
Apple Jelly
Ingredients
Directions
Prepare the apples
Peel, core, and quarter the apples.
Stew the apples gently with water, lemon juice, sugar, and thinly peeled lemon rind until tender.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Apples
- Provide the bulk of the flavour and pectin that helps the jelly hold together.
- Gelatine
- Sets the liquid into a firm, sliceable jelly as it cools.
- Sugar
- Sweetens the jelly and helps give it a clear, glossy texture.
- Lemon
- Adds acidity and brightness that balance the sweetness of the apples and sugar.
The step that matters
Dissolve the gelatine fully before stirring it in. Undissolved gelatine forms lumps and weak spots, so the jelly may set unevenly. Gelatine must be fully melted in warm liquid and mixed in evenly before the mixture cools and sets.

Fit is the average pairing score against apple, sugar. Candidates are from the same food group and used in at least 100 recipes.
