Why it works: Bread and milk are a kitchen classic. They rank in the top 11% of all ingredient pairs, and cooks put them together in 11,466 recipes. Both carry 2-undecenal, which smells sweet. The science ↓
Bread Pudding
Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare
Preheat the oven to 400°F (200°C).
In a bowl, combine the grated bread crumbs, eggs, sugar, nutmeg or cinnamon, and enough milk to make a very thin mixture.
Bake and brown
Pour the mixture into a baking dish and bake for about 30 minutes.
Optional: Beat the white of one egg to stiff peaks, then add 2 teaspoons of powdered sugar.
Spread the beaten egg white on top of the pudding and return it to the oven for a moment to brown.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Bread crumbs
- Form the bulk of the pudding and absorb the liquid to create a soft body.
- Eggs
- Set the custard as they cook, binding the pudding into a sliceable texture.
- Milk
- Moistens the crumbs and forms the custard base that the eggs set within.
- Sugar
- Adds sweetness and helps the top brown during baking.
The step that matters
Thin the milk mixture correctly. The crumbs need enough liquid to soften fully and absorb it evenly. Too little milk leaves dry pockets, while the eggs need the mixture loose enough to set into a smooth custard rather than a dense block.
Swap the nutmeg
How well each one fits the dish's main ingredients (bread, egg, sugar, milk):
- Cinnamonfits better
- Nutmegthe original
- Gingerfits less well
- Allspicefits less well
Fit is the average pairing score against bread, egg, sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
