English Banbury Cakes

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 350°F (175°C).

  2. Roll out the pastry to about ½ inch thick and cut it into pieces.

  3. Roll each piece again until it doubles in size.

  4. Place some Banbury meat on one side of each piece.

  5. Fold the other side over and shape into an oval.

  6. Flatten the top with your hand, keeping the seam at the bottom.

  7. Brush the tops with egg white and dust with loaf sugar.

  8. Bake in the preheated oven until golden.
