What each ingredient does

Ripe grapes
Provide the fruit flavor and the bulk of the jam.
Sugar
Adds sweetness, thickens the jam as it cooks, and helps preserve it.

The step that matters

Boiling the strained grapes with sugar. Sugar and fruit must boil long enough for water to evaporate and the mixture to thicken into jam. Stirring occasionally keeps the sugar from scorching on the bottom of the pan.
