Apple Pie

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Peel and chop the apples, then stew them until soft and sweeten to taste.

  2. Grate the rind of the lemon and stir it in with the egg yolk.

Bake and top

  1. Place the pie crust in the bottom of a pie dish and fill it with the apple mixture.

  2. Bake in a preheated oven at 350°F (175°C) until done.

  3. Beat the egg white with sugar until frothy, then spread it on top of the pie.

  4. Return the pie to the oven for a few minutes until the topping is set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Apples
Provide the bulk of the filling and its tart, fruity flavour.
Egg yolk
Adds richness and helps bind the lemon rind into the filling.
Egg white
Whipped with sugar, it forms a light topping that sets in the oven.
Sugar
Sweetens the apples and helps the egg white whip into a stable froth.

The step that matters

Returning the pie to the oven for the topping. Egg white topping sets quickly with heat but can turn rubbery or weep if overbaked. Watch it closely and remove it as soon as it is set.

Swap the apple

How well each one fits the dish's main ingredients (lemon, egg, sugar):

  1. Orangefits better
  2. Vanillafits better
  3. Limefits better
  4. Applethe original

Fit is the average pairing score against lemon, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
