Prepare the pulp
Remove grapes from the stem and place them in a preserving kettle.
Cover the grapes with water and boil until perfectly soft.

What each ingredient does
- Grapes
- Provide the fruit pulp that forms the body and flavour of the marmalade.
- Clarified sugar
- Sweetens the marmalade and, as it boils down, helps it set to a spreadable consistency.
The step that matters
Boiling with the sugar until the proper consistency is reached. Sugar and pectin-rich fruit must boil long enough to reach the gel point. Too little boiling leaves a runny marmalade, while overboiling can make it stiff and cause scorching.
