Why it works: Pepper and lemon match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Select fresh, large oysters and wash the shells until clean.

  2. Place the oysters in a dripping pan with the round shell down.

Roast and serve

  1. Roast in a hot oven at 400°F (200°C) for about 20 minutes.

  2. Remove the top shell only when ready to eat.

  3. Top each oyster with a small piece of butter, a dash of cayenne pepper, and a few drops of lemon juice.

What each ingredient does

Oysters
Provide the main body of the dish, cooking gently in their own liquor inside the shell.
Table butter
Adds richness and moisture, melting over the oysters to carry flavour.
Lemon
Adds acidity that brightens the rich butter and the briny oyster flavour.

The step that matters

Remove the top shell only when ready to eat. Oysters keep cooking in their own heat after leaving the oven, so opening them late keeps the flesh from overcooking and toughening, and keeps their juices inside the shell.
