What each ingredient does

Beet roots
Provide the main body and sweet, earthy flavour of the dish.
Butter
Adds richness and moisture to the sliced beets as they are dressed.
Vinegar
Adds acidity that brightens the sweet, earthy flavour of the beets.

The step that matters

Pressing out excess water after boiling. Beets hold a lot of water after boiling, and leaving it in makes the dressed slices soggy and dilutes the butter and seasoning. Pressing gently in a colander removes this water so the dressing clings to the slices.
