Ingredients
Directions
The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.
Rub the butter and flour together until very fine.
Add half the sugar, then the yeast and half the milk (hot in winter, blood warm in summer).
Incorporate the eggs, then the remaining milk; beat well and let rise in a warm place overnight.
In the morning, beat for a long time, adding the coffee, rose-water, sugar, spices, and well-floured fruit.
Allow the mixture to rise until very light, then place in cake pans and let rise for 10 to 15 minutes.
Preheat the oven to 400°F (200°C) and bake.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
