Lincoln Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Dissolve the baking soda in hot water and stir it into the sour cream just before adding it to the cake mixture.

  2. Cream the butter and sugar together.

  3. Add the beaten egg yolks, then mix in the sour cream, spices, flour, rose water, and chopped citron.

  4. Fold in the beaten egg whites gently.

  5. Stir well and pour the batter into a loaf pan.

  6. Bake at 350°F (175°C) until a toothpick comes out clean.
