Coffee Filling

Ingredients

Directions

Make the filling

  1. In a saucepan, combine the cream and sugar with the coffee and heat until boiling.

  2. Dissolve the cornstarch in a little cold coffee, then add it to the boiling mixture and let it boil for 3 minutes.

  3. Slowly pour the hot mixture over the well-beaten eggs while stirring rapidly.

  4. If the mixture is not thick enough, set it over boiling water and stir until the eggs begin to set, but do not let it curdle.

Assemble

  1. Spread the filling between layers of cake and frost with Coffee Icing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the custard as they set and give it a rich, smooth body.
Cornstarch
Thickens the boiling coffee mixture into a glossy, spreadable filling.
Sugar
Sweetens the filling and balances the bitterness of the coffee.
Cream
Adds fat for a softer, richer texture and a smoother mouthfeel.
Strong black coffee
Provides the main flavour and liquid base of the filling.

The step that matters

Pour the hot mixture over the eggs slowly while stirring. Adding hot liquid to eggs too quickly can scramble them. Gradual pouring while stirring tempers the eggs so they thicken smoothly instead of curdling.
