Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the almonds

  1. Blanch the almonds in boiling water.

  2. Remove the skins.

  3. Spread the almonds on a dry cloth to cool.

  4. Pound a few almonds at a time in a mortar until well pulverized.

Make the icing

  1. In a bowl, mix the egg whites and powdered sugar until combined.

  2. Add the pulverized almonds and flavoring, then mix well.

  3. Dry the mixture in a cool oven at 300°F (150°C) or in the open air if the weather is pleasant.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped or mixed with sugar, they bind the icing and help it set into a firm, smooth coating.
Powdered sugar
Provides sweetness and dissolves into the egg whites to form the body of the icing.
Sweet almonds
Supply the main flavor and a fine, slightly oily texture once pulverized into the icing.

The step that matters

Drying the mixture. Drying in a cool oven or open air firms the icing so it holds its shape. Too much heat can brown or puff the egg white, so a low, gentle temperature matters.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg, lemon):

  1. Pistachiofits about as well
  2. Milletfits about as well
  3. Almondthe original
  4. Chickpeafits about as well

Fit is the average pairing score against sugar, egg, lemon. Candidates are from the same food group and used in at least 100 recipes.
