Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Forms the body of the candy and, when cooked hard, sets it crisp.
Butter
Adds fat that softens the texture and enriches the flavour.
Lemon juice
Adds acidity and bright citrus flavour.
Lemon rind
Contributes aromatic citrus oils for fragrance and flavour.

The step that matters

Boil until crisp in cold water. Sugar hardness depends on how far the syrup's water evaporates. Stopping too early leaves a soft, sticky candy, while overcooking darkens and can taste bitter, so the test in cold water matters.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, butter):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits better
  4. Lemonthe original

Fit is the average pairing score against sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
