What each ingredient does

Vinegar
Provides the sharp acidity that gives the pickled eggs their tang.
Eggs
Form the body of the dish and soak up the flavour of the pickling liquid.
Cinnamon
Adds warm, sweet aroma to the pickling liquid.
Mace
Adds a delicate, warm aroma to the pickling liquid.
Allspice
Adds a warm, peppery aroma to the pickling liquid.

The step that matters

Boiling the spiced water down to ½ pint. As water evaporates, the spice flavour becomes more concentrated. Adding water back as it boils off keeps the spices from turning harsh and keeps the liquid at the volume needed to balance the vinegar.

Swap the mace

How well each one fits the dish's main ingredients (vinegar, cinnamon, allspice, egg):

  1. Nutmegfits better
  2. Clovefits better
  3. Tarragonfits better
  4. Macethe original

Fit is the average pairing score against vinegar, cinnamon, allspice, egg. Candidates are from the same food group and used in at least 100 recipes.
