Scalloped Lobster

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Layer the prepared lobster meat and cream sauce in a baking pan.

  2. Add a layer of fine cracker crumbs and repeat the layers.

  3. Moisten the top with melted butter.

  4. Bake at 400°F (200°C) until the top is brown.

  5. For a nicer texture, toast the crackers before crumbling.

  6. Optionally, bake and serve in the lobster shells, arranging the tail ends in a fanciful shape.

  7. Garnish with hard-boiled egg and parsley.
