Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ingredients

Directions

Prepare the oysters

  1. Wash the oyster shells and open them, removing the flat shell.

  2. Loosen the oyster but leave it in the deep shell.

Serve

  1. Serve 6 oysters on a plate with a quartered lemon in the center.

  2. Eat with salt, pepper, and lemon juice or vinegar.

  3. For a chilled presentation, make a hollow in a block of ice with a hot flatiron.

  4. Drain the oysters, add salt and pepper, and place them on the ice.

  5. Set the ice in a very cold place to prevent melting.

  6. Before serving, place the ice on a napkin on a platter and decorate with lemon.

What each ingredient does

Oysters
Provide the main raw flesh, whose briny flavour is the centre of the dish.
Lemon
Adds acidity that brightens the briny oyster flavour.

The step that matters

Open the oysters safely and keep them cold. Oysters must be opened carefully so the shell does not break into the flesh, and kept chilled because warm raw shellfish spoil quickly and become unsafe to eat.

Swap the lemon

How well each one fits the dish's main ingredients (oyster, pepper):

  1. Lemonthe original
  2. Limefits about as well
  3. Cherryfits less well
  4. Plumfits less well

Fit is the average pairing score against oyster, pepper. Candidates are from the same food group and used in at least 100 recipes.
