Roast Oysters
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Wash the oyster shells and dry them.
Place the oysters on a bed of hot coals or in a hot oven at 400°F (200°C).
When the shells open slightly, remove the upper shell.
Season the oysters with coarse sea salt and butter.
Alternatively, add salt, black pepper, and butter to each oyster, place in a pan, and bake for 8 minutes.
Serve immediately.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
