Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pineapple pulp
Supplies the main flavour and body of the sherbet.
Sugar
Sweetens the sherbet and lowers its freezing point for a softer texture.
Lemon juice
Adds acidity that brightens the pineapple flavour.
Egg whites
Whipped to add air, giving the frozen sherbet a lighter texture.

The step that matters

Fold the beaten egg whites in when the sherbet is nearly frozen. If the mixture is fully frozen, the whites cannot be folded in evenly and the sherbet stays dense. If it is still too liquid, the whites deflate and the air is lost.
