Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Liver
Main protein; frying in fat browns and firms the thin slices.
Lard or drippings
Frying fat that conducts heat evenly and adds richness and browning to the slices.
Cracker crumbs
Optional coating that adds a crisp, browned outer layer when fried.

The step that matters

Fry the slices until well done. Liver cooked too briefly stays soft and pinkish inside, while overcooking makes thin slices dry and tough. Thin slices in hot fat cook through quickly, so timing matters.

Swap the lemon

How well each one fits the dish's main ingredients (liver, potato, cranberry, sauce):

  1. Applefits better
  2. Limefits better
  3. Orangefits better
  4. Lemonthe original

Fit is the average pairing score against liver, potato, cranberry, sauce. Candidates are from the same food group and used in at least 100 recipes.
