Baked Onions

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash the onions and cook them in boiling salted water for 1 hour until tender.

  2. Remove the onions and lay them on a cloth to absorb excess water.

Bake and brown

  1. Wrap each onion in buttered tissue paper, twisting the top to secure it, and bake in a 300°F (150°C) oven for 1 hour or until tender.

  2. Peel the onions, baste with butter, and brown them for 15 minutes.

  3. Season with pepper and salt, pour on melted butter, and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Onions
Provide the main body of the dish, which becomes sweet and soft as it cooks slowly.
Butter
Adds richness and helps the onion surface brown when basted and heated.

The step that matters

Browning the peeled onions. Basting with butter and browning for 15 minutes needs enough heat on the surface. Onions that are too wet from the cloth drying step may steam rather than brown, so their outsides stay pale.

Swap the onion

How well each one fits the dish's main ingredients (butter, pepper, sugar, milk):

  1. Capsicumfits better
  2. Potatofits better
  3. Sweet potatofits better
  4. Onionthe original

Fit is the average pairing score against butter, pepper, sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
