Saratoga Potatoes

Ingredients

Directions

  1. Slice the potatoes very thin and even, using a mandoline if possible.

  2. Soak the slices in ice water until very cold.

  3. Remove a few slices, dry them on a napkin, and separate them.

  4. Drop the slices into a kettle of boiling lard, keeping them apart while cooking.

  5. Once they turn pale yellow, skim them out and place on a wire sieve set on a plate in the oven.

  6. Sprinkle with coarse sea salt before serving.
