Veal Pie

Ingredients

Directions

  1. Cut veal chops from the neck or breast, or use cutlets from any part.

  2. Season the meat with coarse sea salt, black pepper, mace, nutmeg, lemon peel, and herbs.

  3. Layer the seasoned meat in a dish and cover with thin slices of bacon.

  4. Pour in a little gravy made from bones or trimmings, or use water.

  5. Add forcemeat balls, hard boiled yolks, sweetbreads, kidneys, truffles, mushrooms, oysters, and thick cream for richness.

  6. Spread slices of veal with forcemeat, roll them up, and place in the pie.

  7. Make a hole in the top crust and pour in good gravy after baking.

  8. For a rich pie, add olives, small forcemeat balls, pickled cucumbers, and pickled mushrooms around the olives.

  9. Pour in well-seasoned, thickened, and strained gravy enriched with white wine and lemon juice.
